Beans

Description/Taste: bean pods are thick with a cottony interior encapsulating 2 to 7 large lemon lime-colored beans. 

Nutrients: Beans are a good source of fiber and potassium and also contain some vitamin C and vitamin A.

Beets

Description/Taste: beets are made up of both an edible root and edible leaves, 10-12 inch red and green leafy stems ascend from red beet’s ruby red, smooth, bulbous root. Small or medium beets are generally more tender than larger ones

Nutrients: Beets are an excellent source of vitamin C, folate, manganese, fiber, and potassium. They also contain vitamin B6, beta-carotene, and iron.

Carrots [Parisian]

Description/Taste:  carrots are distinguished by their non-tapering roughly globular shape and petite size, when harvested they are only 1 1/2 to 2 inches in diameter.

Nutrients: carrots are an excellent source of vitamin A and also contain vitamin B6, vitamin K, iron, and manganese.

Carrots [Scarlet Nantes]

Description/Taste:  carrots were first described in the Henri Vilmorin 1885 edition of his family’s famous seed catalog as having a near perfect cylindrical root with smooth skin and entirely edible near-red flesh both sweet and mild in flavor.

Nutrients: carrots are an excellent source of vitamin A and also contain vitamin B6, vitamin K, iron, and manganese.

Cucumber

Description/Taste: cucumbers are medium to large in size, averaging forty-five centimeters in length and five centimeters in diameter, and are long, cylindrical, and slender in shape.

Nutrients: Cucumbers are a good source of vitamin C, potassium, and fiber. They also contain vitamin K, calcium, beta-carotene, and phytonutrients such as flavonoids and lignans, which are antioxidants that help boost immunity and have anti-inflammatory benefits.

Eggplant

Description/Taste: eggplants are oval with a bulbous flat bottom that narrows towards the calyx and averages 25 centimeters in length and 5-12 centimeters in diameter. The outer skin is glossy, smooth, black-purple, and has a green stem.

Nutrients: Eggplants are an excellent source of fiber, vitamin C, potassium, and antioxidants.

Kale

Description/Taste: Kale variety we usually find in the grocery store is a curled green variety. 

Nutrients: An excellent source of vitamin C, Kale provides iron, vitamin A, calcium, magnesium, potassium, protein, carbohydrates and dietary fiber. One half cup of chopped boiled Kale contains about 18 calories. Eat with fish, poultry and meats to enhance iron absorption. 

Okra

Description/Taste: Green okra has a torpedo-shaped pod ranging in length of five to six inches when harvested mature.

Nutrients: Okra pods are a good source of dietary fiber and a mucilage substance that is said to help in easing digestion. Okra is similar to Kiwi fruits with high amounts of Vitamins K and C, manganese, and folate. 

Onion

Description/Taste: onions are small in size, averaging 1-4 centimeters in diameter, and are globular in shape with slightly pointed ends.

Nutrients: onions contain antioxidants, flavonoids, fiber, vitamin C, vitamin A, calcium, and potassium. 

Onion [Bunching]

Description/Taste: bunching onions are petite onions that have long green stems. The onion bulb has a cylindrical shape and deep red outer skin that is paper thin. The inner flesh of the Italian bunching onion is crisp and translucent white. 

Nutrients: Green onions are an excellent source of beta-carotene, folate, and vitamin C, and also contain calcium and vitamin A. 

Pepper [Santa Fe Grande]

Description/Taste:  peppers have a conical shape and come to a broad end at their tip. Their shiny red skin is smooth and usually marked with characteristic striations known as “corking”. 

Nutrients: peppers contain high amounts of vitamin C and carotene. They have all the B vitamins, particularly vitamin B6. The peppers are also high in potassium, magnesium and iron. 

Pepper [Sweet Pepper]

Description/Taste:  bell peppers are medium to large in size, averaging seven centimeters in length and five centimeters in diameter, and are rounded, square, and globular in shape with 3-4 lobes and a thick green stem. 

Nutrients: peppers contain high amounts of vitamin C and carotene. They have all the B vitamins, particularly vitamin B6. The peppers are also high in potassium, magnesium and iron 

Potatoes

Description/Taste: Yukon Gold potatoes are medium to large in size and are round to oblong with a slightly flattened shape

Nutrients: Yukon Gold potatoes contain nearly twice as much vitamin C as a regular baking potato and provide some potassium as well. 

Radish

Description/Taste: The Red radish is grown mainly for its root; a small, scarlet globe with a crisp and peppery, translucent, white flesh.

Nutrients: Red radishes contain vitamin C, folate, fiber and potassium. 

 

Strawberry

Description/Taste: strawberries are large and plump with rounded tops and a conical shape, tapering to a rounded point

Nutrients: strawberries are a great source of iron, folate, fiber, magnesium and potassium.
